Thanks I've got a really extensive spice and condiment pantry, so it's easy for me to get a variety of big satisfying flavors out of simple wholesome ingredients. One of my fallbacks is rice and beans, but I can do quite a lot with them, depending on which region of interests me at the moment, plus some other cheap ingredients like potatoes, onions, and any interesting looking vegetable. I have a few different kinds of dal, and can make a decent semblance of masala dosa by fermenting ground rice and urad dal into a batter and spreading that in a non-stick pan to make crispy rice and lentil pancakes. Stuff with channa dal and potato curry with a South Indian spice profile, serve with a spicy dal rasam soup. And straight channa dal with chickpeas, spices, caramelized onions and tomatoes, also goes great with rice and raita, hitting all the necessary food groups while maximizing big flavors and richness. Or sometimes I'll do a kichdi which is a one pot combination of rice and lentils, plus some chiffonaded kale or some other green. One time I made this for family meal at a past workplace, and everybody baled it down, even though there was no meat. I was like "This is what I make for myself when I'm broke." and people thought it was a hoot.
